SUMMARY OF THE PROJECT
Il Progetto di Ricerca, Sviluppo e Innovazione è finalizzato all'acquisizione di conoscenze funzionali allo sviluppo di nuovi processi di produzione specifici ed è suddiviso in tre filoni:· Nutraceutica, il 'Superlupino': progettazione di nuove formulazioni, con particolare riguardo alle proprietà nutraceutiche del lupino,· Trasformazione, 'Castelvetrano': miglioramento del processo di lavorazione delle olive 'Castelvetrano', minimizzando lo sviluppo di microrganismi non desiderati,· Sostenibilità, 'Trattamento reflui': ottimizzazione del processo di lavaggio dei lupini in un'ottica di sostenibilità ambientale e riduzione dei consumi idrici.
