Il Progetto di Ricerca Sviluppo e Innovazione, denominato 'Strategie per il miglioramento dell'efficienza produttiva e qualitativa del settore lattiero-caseario' (di seguito 'MEP-CASEUS') ha l'obiettivo di sviluppare nuovi prodotti con caratteristiche organolettiche e shelf -life migliorate, attraverso il recupero del siero di latte, elemento ricco di sostanze nutritive ed attualmente trattato come scarto di lavorazione.
